DESCRIPTION

Juanyi started a project with some classmates to investigate whether students in a nutrition class had a higher percentage of meeting their recommended dietary fiber intake compared to the general student population. They were surprised to find out that despite a relatively higher percentage of meeting recommended dietary fiber intake of students in a nutrition class, the percentage was still low (20.66%), which indicated that the effect of current nutrition education is limited. With the help of the GFI Fellowship, Juanyi will extend her project to investigate how to improve the effectiveness of nutrition courses with the help of the GFI program. Her research will help more people access safe and nutritious food or improve the current food system to feed more people sustainably.
