Lorenzo will aim to tackle the carbon-waste nexus through a project on food waste. The scope of the project is to quantify the potential food supply and resource savings that could be made by reducing food waste from the UC dining facilities, the amount of greenhouse gas (GHG) emissions, land use, calories, and economic impacts from wasted food in particular. These results will raise awareness of the amount of resources associated with avoidable food waste. This project will help bridge the engagement gap between students and the CNI and provide resources to better support collaboration between the GFI, CNI, and Zero Waste goals.
